The common snook is a coastal game fish in the family Centropomidae and one of the most popular sport species in the western Atlantic. Recognized by its sleek, golden body and bold black lateral line, it can exceed 40 inches and is built for speed.

Snook are protandric hermaphrodites-most mature first as males and some transition to females as they grow. Spawning peaks in warm months in higher-salinity passes; juveniles use protected estuaries, creeks, and marsh edges before shifting back to saltier water.

Yes—snook has firm, white, mild-flavored fillets. In Florida, it’s a regulated gamefish; when harvest is open, we skin the fillet (the skin can taste “soapy”) and follow current slot and bag limits. Many anglers still choose catch-and-release to protect larger breeding females.

Why don’t restaurants serve snook?

Florida law prohibits the commercial sale of snook; it’s a recreational gamefish only. That’s why you won’t see true snook on menus. If harvest is open in our zone and your fish is in slot, we can clean it for you to cook at home or via “hook-and-cook” partners.

Do snook only live in Florida?

No. Common snook range through the western Atlantic – from Florida and the Gulf of Mexico south through the Caribbean to Brazil. Florida holds famous fisheries thanks to extensive estuaries and warm winters; the species is sensitive to cold and retreats during severe snaps.
